Coffee Granola

Who doesn't love a good crunchy granola early in the day? Packed full of oaty goodness and the natural, healthy tastiness of nuts and dried fruit. Granola has been an excellent partner to many a morning cup of your favourite FiXX. But, have you ever stopped to wonder if there was a place for coffee in the granola? Well, wonder no more.

 

 

Ingredients

 

Dry

  • 300g rolled oats
  • 100g pecans, roughly chopped
  • 75g almonds, roughly chopped
  • 50g pumpkin seeds
  • 40g sunflower seeds
  • 1 tsp ground cinnamon
  • ¼ tsp sea salt

 

Wet

  • 50ml Brewed FiXX (This is your choice. In this recipe, we used FiXX Lisbon brewed using an AeroPress, but a double espresso or French Press will give you good results, too)
  • 70ml maple syrup
  • 40ml honey
  • 40ml melted coconut oil
  • 1 tsp vanilla extract

 

 

Method

  1. Preheat the oven to 150°C (300°F) fan.
  2. Line a baking tray with baking parchment.
  3. Combine all the dry ingredients in a large bowl. 
  4. Brew your coffee and melt your coconut oil.
  5. Whisk together the coffee, maple syrup, honey, oil, and vanilla until fully combined, then pour over the oats and stir until every oat is lightly coated.
  6. Spread onto the tray in an even layer.
  7. Place on the middle shelf of the oven and bake for around 40-50 minutes. 
  8. Every 10–12 minutes, gently turn sections of the granola to encourage even colouring while leaving some clusters intact. Baking time can vary considerably from one oven to another, so keep an eye on the oven!
  9. When evenly browned, remove from the oven and allow to cool.
  10. Once cooled (approx. 45min), you can break it up by hand or with a spoon to your desired level of crunchiness.
  11. You can now stir through any of the below optional extras.

 

 

After Baking Optional Extras

  • 75g raisins and/or cranberries (optional)
  • 40g coconut flakes (optional)
  • 50g dark chocolate chips (optional)
  • Orange zest (optional)

 

The great thing about granola is that it is just the beginning. What you do with it from here is up to you. For starters, your choice of FiXX will obviously affect the final result. We used FiXX Lisbon as it brings a nice fruity sweetness. But why not try the chocolatey FiXX Organic, the intense dark-roasted notes of FiXX Cubano, or even the nice floral notes of FiXX Decaf? From there, you can pair it with Greek yoghurt, natural yoghurt and honey, fresh berries, or even just a splash of your favourite milk type. The choice is yours. Enjoy!
