Choco-Espresso Ice Pop
Full coffee flavour with a rice dark chocolate body. Delicious and decadent. Using ice to flash-freeze the espresso flavours adds a lovely depth of flavour to this ice pop. And if you don't have access to an espresso machine, just brew some strong coffee in a french press.
Ingredients
- 50ml FiXX espresso (approx double shot, and any blend will work)
- 100g ice
- 50g dark chocolate sauce.
- 5ml simple syrup (sugar dissolved in water 1:1)
- Dark chocolate chips
Method
- Put 100g of ice in a jug and add 5ml of simple syrup.
- In a separate jug, add the chocolate sauce and brew your coffee straight on top of it.
- Mix to combine the espresso and chocolate sauce, then pour the mixture over the ice and flash-chilling it.
- Pour the liquid into your ice pop moulds, leaving a little space at the top for the stick and chocolate chips.
- Put in the freezer for 30 min, then take out and add the chips to the mixture.
- Put your stick in place, then return to the freezer until fully frozen.
- For easy removal from the moulds, pour some hot water on the outside before removing.
