Coffee Protein Balls
A grab and go snack? That's easy to make? And with a delicious coffee flavour? Yes, please! These FiXX Protein Balls are a perfect mid-morning snack. Packed full of energy to keep you going through the rest of your day.
Ingredients:
- 225g Medjool Dates (stones removed)
- 80g Rolled Oats (porridge oats)
- 50g Walnuts
- 70g Cashews (toasted is best)
- 25g Desiccated (shredded) Coconut
- 50ml FiXX Espresso (or strongly brewed coffee)
- 35g Toasted Sesame Seeds
- 1 tbsp Cocoa Powder
- 1 tbsp Maple Syrup
- A Pinch of Salt
Method:
- Put your dates in a bowl and cover with water. Or better still, if you have some leftover, cold coffee, use that to enhance the coffee flavour.
- Soak them for 30min to soften the dates.
- While this is happening, toast your sesame seeds in a frying pan and leave them to one side to cool. If you've got time, toast your cashews too for more flavour.
- When your dates are ready, drain and put them in a food processor along with all the other ingredients, except the sesame seeds.
- Blitz until well combined.
- Use your hands to roll into golf ball-sized balls.
- Roll in toasted sesame seeds to thoroughly coat.
- Then place them in the fridge for at least one hour before enjoying.
