Coffee Flapjacks

Say hello to the FiXX Coffee Flapjacks - chewy, oaty goodness packing a caffeine kick to power you on your day. They're dangerously moreish, ridiculously easy, and quite possibly the most productive thing you'll bake all week. The only tricky thing will be deciding which of your favourite FiXX to use! Enjoy!

 

Ingredients

For the Flapjacks

 

  • 280g Butter
  • 100g Golden syrup
  • 85g Dark brown soft sugar (muscavado sugar)
  • 100ml Brewed coffee (the stronger the better)
  • 100g Dark Chocolate chips
  • 350g Whole Oats (porridge oats work fine)
  • 100g Plain flour

 

For the Icing

  • 75g Butter
  • 45ml Brewed coffee (the stronger the better)
  • 350g Icing sugar
  • 50g Crushed hazelnuts

 

 

Method

  1. Preheat your oven to 190°C/170°C fan (375°F/340°F, gas mark 5).
  2. Line a 20 x 30cm cake tin with baking parchment.
  3. Brew your favourite FiXX. If you've got an espresso machine, this will help pack the most amount of coffee flavour in. However, I brewed FiXX Single Origin with a fine grind using an AeroPress and was very happy with the result. Stove top or French press with a darker roast will give you really good results, too. You can always use FiXX Decaf for the full coffee flavour without the caffeine.
  4. In a pan, melt the butter with the sugar, syrup and coffee.
  5. Take the pot off the heat and stir in the oats and the flour with a pinch of salt.
  6. If you stir in the chocolate chips now, they will melt. And that's OK, because it'll still taste great. If you want to keep actual chips, you'll need to wait about 5 minutes before adding them. However, you'll need to keep stirring the flapjack mixture, otherwise it will begin to solidify.
  7. Once your chips have been added, press the mixture evenly into the lined tin and bake for 25 minutes. After baking, leave it to cool to room temperature.
  8. While that's cooling, get cracking on your icing. Sift the icing sugar into a large mixing bowl and stir in the hazelnuts.
  9. In a pot, melt the butter together with the coffee, then stir into the icing sugar.
  10. Mix to create a smooth, delicious icing.
  11. Once the flapjacks have cooled to room temperature, evenly spread the icing over them. Leave until the icing has set, which you can hurry up by popping them in the fridge for this last bit.
  12. Once the icing has set, all you have to do is enjoy!

 

These flapjacks will keep for a week in an airtight container for up to a week.
