FiXX Single Origin #61 is a unique coffee from Papua New Guinea. Hailing from the Jikawa province, located in the fertile western highlands of the country, this coffee has been grown by a collection of small-scale farmholders, with an average farm size of 1-2 hectares. Coffee from PNG is incredibly rare, with the country producing less than 1% of the world's coffee. And natural processed coffees from PNG are even rarer still. After harvest, cherries are hand-sorted and placed on raised beds, where they are manually moved regularly for an average of 3 to 4 weeks until they are thoroughly dried. The resulting coffee is a beautiful, full-bodied brew with red fruits, chocolate, and a wine-like mouthfeel.
