FiXX Single Origin #66 is a remarkable coffee from the highlands of Chiapas, Mexico, grown within the protected El Triunfo Biosphere Reserve. Covering almost 120,000 hectares, this unique cloud forest environment captures natural condensation, creating ideal conditions for coffee cultivation and supporting a rich diversity of plant and animal life. The coffee takes its name from the Cotorras, a striking bird species native to the region, symbolising authenticity and freedom across these farms. Around 300 small-scale producers contribute to this lot, carefully cultivating and harvesting the cherries. After being hand-picked, the coffee is fully washed and fermented for 20–24 hours before being dried on raised African beds and concrete patios. The resulting coffee is a sweet, well-rounded cup with a creamy, full body and notes of chocolate, red fruit, spices, raisins and berries.
