FiXX Single Origin #53 is an exclusive red honey-processed coffee from Costa Rica. It hails from the San Marcos area of Tarrazú, a region ideal for growing coffee thanks to its rich red, volcanic soil. Ripe cherries are hand-picked and left to ferment in barrels for 34 hours without water. The fermented cherries are pulped, and 75% of the flesh is left on, which boosts the coffee's sweetness. They are then dried on sun patios until they reach a reddish colour. This method results in a sweet, clean cup with pronounced fruity flavours.
