FiXX Single Origin #54 is a delightful washed coffee from Colombia. It is produced by Silvio Ordoñez on his 1.5-hectare farm near San Augustin, Huila. Located in southwestern Colombia, Hulia is nestled between the Central and Eastern ranges of the Andes in the Magdalena Valley. The variation in elevation of this area results in Huila being one of the country's most unique and complex regions for coffee production. After harvest, the cherries are left to rest for 32 hours before removing their pulp and fermenting for 40 hours. They are then sent to dry for 15 days, resulting in a sweet and acidic flavour.
