This month's offering sees our long-awaited return to Honduras. Hailing from Finca La Valentina in the La Paz region, this area's high elevation and cool temperatures allow coffee cherries to ripen slowly, developing sugars and fruity sweetness. The coffee was then processed using the Red Honey method, a hybrid between the washed and natural processes, using less water to produce fruity and sweet cups with a good body. The result is a delicious, delicately sweet coffee with winey acidity and flavours of almond, praline and chocolate.
